This is a really favourite and pretty healthy dessert. One that I don't plan on ever giving up.
3 tbsp butter
3 tbsp canola oil
1 cup whole-wheat flour
1 1/2 baking powder
1 tsp salt
1 cup skim milk
1/2 cup sugar
1 tsp vanilla extract
2 cups frozen peaches, cut into chunks (these will thaw as you cut them into chunks)
2 cups frozen blueberries, thawed and drained well
Preheat oven to 350F
Place butter and oil in 9 x 13” baking pan. Heat in oven until melted and fragrant, 5 to 7 minutes. Meanwhile, combine flour, baking powder and salt in a large bowl. Add milk, sugar and vanilla, stir to combine. Add the melted butter mixture to batter and stir to combine. Pour batter back into hot pan and press down to fill the pan and make even. Spoon in peaches and blueberries evenly over the batter.
Return the pan to the oven and bake until the top of the cobbler is browned and the batter around the fruit is completely set, 50 minutes to 1 hour. Set baking dish on a wire rack to cool for at least 15 minutes. Serve warm with ice cream or cool whip (or whipped cream if you prefer).
