Recipes - Cinnamon Loaf

 

Good morning, my friends.  This recipe I make with the help of my food processor but of course you can mix it up whatever way you like to do.  I love cinnamon and cinnamon and Christmas always seems to go together so this loaf cake is a real favourite at this time of year.  

1/2 cup butter

1 cup sugar

2 eggs

2 cups flour

1 cup sour milk (add 1 tsp lemon juice to milk-stand 10 minutes)

1/2 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp vanilla

Sprinkle mix – 1/2 tsp salt, 3 tbsp brown sugar, 1 heaping tbsp cinnamon

Preheat oven to 350F

Spray loaf pan with cooking spray. Cream butter and sugar in processor. Beat in eggs and add sifted dry ingredients, alternately with sour milk. Add vanilla. Place a layer in loaf pan then sprinkle mix. Continue to layer until finished. Bake at 350F for 1 hour or until toothpick comes out clean.
